Sprouted Emmer (Khapli) Atta

Made with 100% certified organic whole emmer (khapli) wheat kernels. We slow grind at 90 RPM (similar to the hand movement of the traditional hand-powered chakki) using natural stone mills - not steel or emery-based high RPM commercial mills. We grind every day.
To make the softest and most aromatic rotis, mix the dough with water (an optional pinch of salt) and leave it standing covered for an hour, or even overnight in the fridge (for truly healthy rotis).
